There is something about caramelized onions that makes me swoon. I absolutely adore them, especially burgers with caramelized onions. Lip smacking good I tell you! A while back, I was watching Rachel Ray’s 30 Minute Meals show and she [...]

I love the Pioneer Woman’s new show Food Network! I love her cooking style and how they’ve incorporated her blogging into the show. On her first episode, she made Cowboy Breakfast Sandwiches. As soon as I saw them, I just knew my husband would love them! I knew, though, that I had to make a few tweaks to the recipe. So, the recipe that follows is my interpretation of the PW’s original.

I am always on the look out for recipes that will help me encourage my family to eat more veggies. And, over the years I’ve found that I can roast pretty much anything and they will love it! Especially if I roast it with garlic! I mean, what’s not to love?! Some of my favorite roasted vegetable recipes are Tuscan Roasted Asparagus, Parmesan Roasted Green Beans and Roasted Provencal Vegetables. When, I found this recipe for roasted Brussels Sprouts on Pinterest, I thought I’d give it a whirl.

It’s not often that I get a chance to relax with a mouth watering cocktail. But, when I do, my drink of choice is a Pomegranate Martini! I discovered this yummy concoction a few months ago while at a conference in Los Angeles. And, ever since, I’ve been searching for the perfect recipe to make these bad boys at home.
But, before I get to the recipe, let me tell you a little about my trip to LA! I had the AMAZING opportunity to visit the set of The Office — you know, the quirky NBC sitcom?! The fictional company, Dunder Mifflin, is set in Scranton, PA and that’s where I’m from! So, it was an awesome experience to visit the set and meet some of the actors! And, my friends and I even had an unbelievable opportunity to be extras in one of the scenes! We even had to visit the wardrobe trailer because we “weren’t Scranton enough”! How funny is that?!? Ultimately, our appearance was cut from the episode, but I’ll get to keep the experience forever! It was truly awesome! Here are some photos from my trip…

It was one of those nights. I got home from work late. I hadn’t been to the butcher so we didn’t have any meat. What would we have for dinner? The natives were getting restless. I found myself standing in front of the pantry staring blankly into the abyss. Nothing in there inspired me. Maybe there was something in the fridge. I found a package of pre-made gnocchi. Hmmm…that had possibilities. I found some leftover heavy cream. OK. I can see this coming together. Ohh! A hunk of parmesan cheese. I think I’ve got something here. Gnocchi with Parmesan Cream Sauce! Oh, and some broccoli too! Gnocchi and Broccoli in a Parmesan Cream Sauce. Ding. Ding. We have a winner!

Raise your hand if you LOVE garlic! Me! Me! Me! That must be what initially drew me to this recipe. Just look at the first ingredient….20 cloves of garlic. It’s a good thing my husband and son really love garlic too, considering how much we go through in this house. I love garlic in any way, shape or form. I’m curious though…I’ve never had black garlic. I’m wondering what it’s like, but the grocery stores in my area don’t carry it. Have any of you tried black garlic

A few weeks ago, Christina at This Woman Cooks, posted a link to her Cheesy Parmesan Orzo on It’s a Keeper Thursday. As soon as I saw it, I knew I had to try it! It looked so cheesy and good. Plus, she said it was super easy.
I don’t know about you, but I’m always on the lookout for new side dishes that I can add to my weeknight dinner arsenal. I mean, c’mon, we love brown rice as much as the next guy, but one can only eat so much before it gets bor-ring! Needless to say, this recipe caught my attention so I thought I would test it out for all of my faithful readers!

One night (very, very late at night), as I was wandering around cyber-space, I came across a recipe for this Cinnamon French Toast Bake. And, just like going to the grocery store on an empty stomach, you shouldn’t wander around cooking blogs on an empty stomach either! I found myself bookmarking LOTS of recipes!

A few weeks ago, I featured this recipe a homemade version of my FAVORITE Girl Scout cookies….Samoas! They looked so good that I just had to make them! I mean, what’s not to love? Chocolate? Coconut? Caramel? Shortbread? And, put it all together and you’ve got one super, duper yummy cookie! Every year, when the neighborhood girls camp out in front of the grocery store, I have to buy a box. And then…I hide it! I want them all to myself! And, I know it sounds silly, but I ration them. I want to extend the bliss as long as possible.
