<p>I discovered this recipe by accident.  I was having some guests over and realized that I completely forgot to plan a dessert.  Duh!  I found a few recipes online for mug cakes and took my favorite parts of each one to come up with this recipe.  As my friends started arriving, I was whipping this easy chocolate cake together.  It was ready in no time!  <span id="more-3774"></span></p>
<p>Since then, I&#8217;ve made this cake a few times!  The best part is, you can assemble it ahead of time and bake it off when you need it.  This way you can serve it warm!</p>
<p>All you need are a few simple ingredients and a microwave.  That&#8217;s it.</p>

<h6>Easy Chocolate Cake</h6>

<p>1/3 cup sweetened flaked coconut<br />
1 cup sweetened condensed milk, divided<br />
1 9oz package Devil&#8217;s Food Cake Mix<br />
1/3 cup sour cream<br />
1 egg<br />
Non-stick cooking spray<br />
1/4 cup chocolate chips</p>
<p>Place coconut in a 9&#215;9 glass baking dish.  Microwave on high for 2-3 minutes or until lightly browned, making sure to stir every 30 seconds.</p>
<p>In a small mixing bowl, combine coconut and 1/2 cup of sweetened condensed milk.</p>
<p>In a large mixing bowl, combine cake mix, remaining condensed milk, sour cream and egg.  Mix until all ingredients are combined.</p>
<p>Spray 9&#215;9 glass baking dish with non-stick cooking spray.  Pour in cake mix batter.  Pour cocount mixture evenly over cake batter.</p>
<p>Microwave, uncovered, on high for 3-5 minutes or until center of cake looks moist, but not wet.  Remove from microwave, cover baking dish with foil and let stand for 5 minutes.</p>
<p>Microwave chocolate chips in a microwave safe bowl on high for 45-60 seconds. Stir until melted and smooth.  Drizzle melted chocolate over cake.  Serve warm.</p>

<p>I consider myself a carrot cake connoisseur.  How&#8217;s that for alliteration?!  It is, after all, my favorite dessert.  If it&#8217;s on the dessert menu, there is no question.  It&#8217;s what I&#8217;m ordering.  Over the years, I&#8217;ve sampled many-a-carrot-cake.  I&#8217;ve had good carrot cake.  I&#8217;ve had bad carrot cake.  I&#8217;ve had dry carrot cake and I&#8217;ve had bland carrot cake.</p>
<p>But this recipe&#8230;this recipe is the best carrot cake you will ever have.  Some (like me) might even go so far to call it extraordinary.   It is three layers of delectable cake, chocked full of carrots, and soaked in a warm buttermilk glaze.  If that&#8217;s not enough to send you over the edge, the entire cake is enveloped in a layer of luscious cream cheese frosting.  Oooh, that just gave me chills!<span id="more-3567"></span></p>
<p>It is rich and decadent and indulgent and moist and&#8230;now I need to stop drooling.</p>
<p>A word of caution though.  This recipe is not for the calorie conscious.  All of this divine goodness comes with a price.  My advice to you is don&#8217;t think about it.  Take a forkful and close your eyes and be transported right to your happy place.  Your happy place with carrot cake.  Does it get any better than that?</p>
<p>Go now.  Make this cake.  You can thank me later.</p>

<p><span style="text-decoration: underline;">Cake</span><br />
2 cups flour<br />
2 tsp baking soda<br />
1/2 tsp salt<br />
2 tsp cinnamon<br />
3 eggs<br />
2 cups sugar<br />
3/4 cup vegetable oil<br />
3/4 cup buttermilk<br />
2 tsp vanilla<br />
2 cups grated carrot<br />
1 (8-ounce) can crushed pineapple, drained<br />
1 (3 1/2-ounce) can flaked coconut<br />
1 cup pecans or walnuts, chopped</p>
<p><span style="text-decoration: underline;">Buttermilk Glaze</span><br />
1 cup sugar<br />
1 1/2 tsp baking soda<br />
1/2 cup buttermilk<br />
1/2 cup butter or margarine<br />
1 Tbsp light corn syrup<br />
1 tsp vanilla extract</p>
<p><span style="text-decoration: underline;">Cream Cheese Frosting</span><br />
1/2 cup butter, softened<br />
1 (8-oz.) package cream cheese, softened<br />
1 (16-oz.) package powdered sugar<br />
1 teaspoon vanilla extract</p>
<p>Line 3 (9-inch) round cake pans with wax paper; lightly grease and flour wax paper. Set pans aside. Stir together first 4 ingredients. Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth. Add flour mixture, beating at low speed until blended. Fold in carrot and next 3 ingredients. Pour batter into prepared cake pans. Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean.</p>
<p>During the last 5 minutes of baking, begin making glaze.  Bring first 5 ingredients to a boil in a large Dutch oven over medium-high heat. Boil, stirring often, 4 minutes. Remove from heat, and stir in vanilla. Drizzle Buttermilk Glaze evenly over layers; cool in pans on wire racks 15 minutes. Remove from pans, and cool completely on wire racks.</p>
<p>To make the frosting, beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add powdered sugar, beating at low speed until blended; stir in vanilla.   Spread frosting between layers and on top and sides of cake.</p>

<div class="print-this-content"><strong>Homemade Girl Scout Cookies: Samoas</strong><br />

<em>Original recipe from Casual Dish</em><br />

<p>Cookie Base:<br />
1/2 cup sugar<br />
3/4 cup butter, softened<br />
1 large egg<br />
1/2 tsp vanilla extract<br />
2 cups all purpose flour<br />
1/4 tsp salt</p>
<p>Preheat oven to 350F. Lightly grease a 9×13-inch baking pan, or line with parchment paper.<br />
In a large bowl, cream together sugar and butter, until fluffy. Beat in egg and vanilla extract. Working at a low speed, gradually beat in flour and salt until mixture is crumbly, like wet sand. The dough does not need to come together. Pour crumbly dough into prepapred pan and press into an even layer.<br />
Bake for 20-25 minutes, until base is set and edges are lightly browned. Cool completely on a wire rack before topping.</p>
<p>Topping:<br />
3 cups shredded coconut (sweetened or unsweetened)<br />
12-oz good-quality chewy caramels<br />
1/4 tsp salt<br />
3 tbsp milk<br />
10 oz. dark or semisweet chocolate (chocolate chips are ok)</p>
<p>Preheat oven to 300. Spread coconut evenly on a parchment-lined baking sheet (preferably one with sides) and toast 20 minutes, stirring every 5 minutes, until coconut is golden. Cool on baking sheet, stirring occasionally. Set aside.</p>
<p>Unwrap the caramels and place in a large microwave-safe bowl with milk and salt. Cook on high for 3-4 minutes, stopping to stir a few times to help the caramel melt. When smooth, fold in toasted coconut with a spatula.<br />
Put dollops of the topping all over the shortbread base. Using the spatula, spread topping into an even layer. Let topping set until cooled.</p>
<p>When cooled, cut into 30 bars with a large knife or a pizza cutter (it’s easy to get it through the topping).<br />
Once bars are cut, melt chocolate in a small bowl. Heat on high in the microwave in 45 second intervals, stirring thoroughly to prevent scorching. Dip the base of each bar into the chocolate and place on a clean piece of parchment or wax paper. Transfer all remaining chocolate (or melt a bit of additional chocolate, if necessary) into a piping bag or a ziploc bag with the corner snipped off and drizzle bars with chocolate to finish.<br />
Let chocolate set completely before storing in an airtight container. <div class="clear"></div></div>

<p><strong>Is It a Keeper?</strong></p>
<p>If the caramel stuck to my fingers (and keyboard!) is any indication&#8230;I&#8217;d say these are a home run!  Holy cow, they are yummy!  The recipe makes a big batch &#8212; which is a VERY good thing!  So, I felt better about sharing them with my husband and son!  Of course, they loved them too!</p>
