These Slow Cooker Pulled Pork Tacos are a copy cat of one of my favorite food truck recipes.  They are so full of flavor and texture!

Slow Cooker Pulled Pork Tacos from It's a Keeper

A few months ago, one of our area food trucks, What the Fork, came in second place in Live with Kelly and Michael’s Truckin’ Amazing Cook Off contest.  Their amazing Pulled Pork Tacos with Sriracha Slaw, Sweet Potato Straws and Candy Sauce impressed the pants off of Kelly Ripa and Michael Strahan.

And, rightfully so.  They are to die for!  What the Fork makes so many amazing things, but these tacos are my absolute favorite. What the Fork owner, Mario and Katie have created something magical with these tacos.

There is so much going on.  You have juicy, slow cooked pulled pork, a soft taco shell, zesty sriracha slaw and sweet candy sauce.  These tacos are just layer upon layer of flavor and texture.  What’s not to love?!

Ever since I had my first bite of these tacos, I knew I had to recreate them.  The recipe below was adapted from the one posted on Kelly and Michael’s website.  I used my own slow cooker pulled pork recipe since I love the spice rub and it’s easy to make.  Plus, I also used my own Sriracha Slaw recipe.  Again, I loved the flavor of mine.

When I made them, I made everything except for the sweet potato straws.  I don’t know why I left them out.  I just did.  Don’t do what I did.  Make the straws.  You’ll thank me later.
