This past weekend it was snowing, which seemed like the perfect time to pop on some Christmas carols and start baking!  I scoured my pile of Christmas cookie recipes and came up with these Welsh Cookies.

My friend Jen M.  brought them to a cookie exchange that I hosted a few years ago.  I loved how light and flavorful they were.  Welsh Cookies always seemed daunting to me because you need to fry them.  But, when I tried the recipe for myself, they were really quite easy to make.

My good friends at Good Cook sent me a Cookie Baking kit to test out.

  1. I’ve never heard of Welsh Cookies, but they sound mighty tasty!

  2. I had never heard of Welsh cookies either. Sound pretty good to me. One thing that confused me was when you said “Fry” them. I read and reread it several times. I wouldn’t really call that frying. ;)
