Baked Blueberry Oatmeal It's a KeeperWe are very lucky to have easy access to lots of fresh blueberries every summer.  I usually pick enough in the summer to stuff my freezer.  Which means, I’m always looking for new blueberry recipes like this Baked Oatmeal with Blueberries.

This recipe caught my eye, because I love oatmeal!  What I don’t love is standing over the stove in morning stirring and stirring.  This baked oatmeal sounded like a winner to me!

Is it a Keeper?

This was pretty good!  The original recipe called for putting a layer of sliced bananas in the baking dish first, but I tried it and didn’t like it at all.  I thought the bananas became slimy and the texture was a bit off for my tastes. But, if you’re a baked banana fan, by all means give it a whirl!

This oatmeal couldn’t be easier to make! I like that I can bake this once and eat it all week — all I need to do it reheat it.  Perfect for hectic weekday mornings!

    Just made this today and really liked it. I used frozen wild blueberries, so the dish came out very purpley, but the taste is very comfy! I will be enjoying this all week, too, as an easy reheat breakfast. Thanks for sharing

    Forgot to add, next time I make this, will toast the nuts first. I like my nuts with a little crunch to them
