Today, I had the amazing opportunity to do a cooking segment on WBRE’s PA Live! I have to admit I was nervous but holy cow…WAS IT FUN! Dave Kuharchik and Monica Madeja are both awesome! They made me feel so comfortable. And, I had such a great time showing the viewers how to make a rockin’ weeknight meal in under 30 minutes!
But, seriously, the whole meal can be made in 30 minutes! I know what it’s like…between work, soccer practice, cub scouts and homework, putting a good meal on the table can be a challenge. Especially when you’re feeling uninspired. Hopefully, this meal will help inspire you when you’re in a dinner rut. It’s sure to make your family happy!
Here’s how I do it:
- Measure and prepare all of the ingredients for the Pork Chops, Parmesan Orzo and Roasted Green Beans and preheat the oven
- Start by searing the pork chops on both sides — don’t worry about cooking them all the way through, they get to hang out in the sauce to finish cooking
- Saute the onions until their soft and translucent
- Add the flour and stir into the onions for a minute or so
- Add the remaining ingredients for the Drunken Pork Chops to the pan, put the chops, and the juices on the plate, into the pan
- In a bowl, combine all of the ingredients for the green beans in a large bowl — toss to combine
- Spread the green beans on a baking sheet (line it with foil for easy clean up) and put into the preheated oven for 15 minutes
- In a sauce pan, melt one tablespoon of butter
- Add the orzo, garlic powder, salt and pepper
- Stir for 2-3 minutes until pasta is toasted
- Add chicken stock to orzo
- Turn heat to medium and let it simmer until the orzo has absorbed all of the stock (about 10 minutes)
Everything should be done right around the same time. It’s the perfect weeknight meal — easy, fast and delicious!
