Garlic Lime Chicken with Pineapple Jalapeno Salsa It's a KeeperToday’s post is a two-fer!  You’re getting two for the price of one!

A few weeks ago a friend of mine was telling me about this great dinner that her husband had made — grilled pork chops with a grilled pineapple salsa.  For days, I couldn’t stop thinking about that salsa!  I had to have it.  So, what’s a girl to do?  Google it!

I found tons of potential recipes.  I sifted through a number of them, but nothing fit the bill.  I’m picky like that. So, I took the best parts of 3 or 4 recipes and combined them to make my own. (This seems to be a trend with me.  I can never find exactly what I’m looking for so I usually end up making it myself.)   After a little tweaking, I think I found a keeper!

While the salsa was chilling out in the fridge — the pineapple getting cozy with the jalapenos and whatnot — I headed to the grocery store.  I was on a mission to find something to serve with my new concoction.  In the spice aisle, I happened upon a packet of McCormick Recipe Inspirations.  These are recipe cards that come with little pockets of pre-measured spices.  The Garlic Lime one sounded perfect for the boneless skinless chicken breast that I had at home!

Is It a Keeper?

This flavor combination was INCREDIBLE!   The chicken was so flavorful and juicy.  I ended up making this chicken twice.  Once with the seasoning packet and once after I tweaked it a little by replacing some of the dried items with fresh.  The recipe above is my version.  It was perfect all on its own, but when you topped it with the Pineapple-Jalapeno salsa….oh my!

The salsa has just enough kick from the jalapeno, but not too hot.   My 5 year old even liked it.  And, I really like the contrast of the tart lime and sweet undertones of the brown sugar.  Pure perfection.   I served it with brown rice and garlic green beans.   The salsa was perfect mixed in with the rice too.  Oh, who the heck am I kidding.  The salsa was good right out of the bowl as I was making it!

So beware.  If you make this dish, you may be tempted to taste the salsa to see if it’s seasoned right.  And, then you’ll need another little taste.  And another.  And another.  It’s THAT good!

This was also a very quick and simple dinner to put together.  You can make the marinade ahead of time.  Just add the meat when you’re ready.  And, the salsa comes together pretty quickly too.  Fast, easy, light and tasty!  What more does a girl need?!?

Oh, and I want to give props to the hubby for taking the wonderful picture above!  His photographic wizardry made this dish look as good as it tasted!  He’s good like that!

    Hi. How much oj is used in the salsa recipe? You have 1/ so is it one or 1/2 or 1/4? Also you mention using the McCormick seasoning packet but then it is not listed in the recipe. This is your interpretation- yes? Thanks.
