Roasted Roma TomatoesA few weeks ago, I featured Crock Pot Chicken Parm by The Rickett Chronicles on my weekly recipe and craft linky — It’s a Keeper Thursday.  Nestled inside her recipe for Chicken Parmesan, was another recipe for Roasted Roma Tomatoes.  My test of her Slow Cooker Chicken Parm recipe turned out pretty good! And, since I was already planning on roasting some green beans for Parmesan Roasted Green Beans (are you noticing a theme here?!?), I thought why not give the tomatoes a try too! 

Is It a Keeper?

Mmmmmm Hmmmm!  These were fan-flippin-tastic! It even made winter tomatoes taste good!  As soon as I tried these, I immediately called my mother to tell her I’d found a new way to prepare our annual tomato bounty from our gardens! I’ll be roasting just about all of the tomatoes I get from my garden this year.  This recipe really made me yearn for summer!  I can only imagine how good it will be made with MY tomatoes from MY garden! I can’t wait!

I did end up making a few small tweaks to the recipe.  I used tomatoes on the vine in lieu of Roma tomatoes.  The Romas just didn’t look good — they were all pale and mealy looking.  Ick!

Plus, I didn’t add all the sugar that the recipe called for.  I can’t tell you exactly how much I used.  I just added a good handful.

Finally, when they were done roasting, I gave them a whirl in my food processor.   My hubs is not a fan of tomato chunks in his food, so I always give them a few pulses in the ol’ Cuisinart.

Wende at the Rickett Chronicles mentions that she likes these tomatoes on crackers as a snack!  What a great idea — I think I’ll go have a little snack!
