Cinnamon Swirl Pancakes
Yeah, you read that right…cinnamon swirl pancakes! I can’t even begin to tell you how I stumbled upon this little gem. One night I was wondering around blogosphere. Just bouncing from here to there, looking for things that caught my eye. And then, I found it. Cinnamon Swirl Pancakes. My mouth started watering almost instantly! I found the recipe on Frugal Antics of a Harried Housewife. OK, I can’t possibly wait any more…here’s the recipe:

Batter for one batch of pancakes (from your favorite recipe or mix)
1 stick butter, softened
1 cup brown sugar
2 Tbsp cinnamon
In a large microwave safe bowl, combine the butter, brown sugar and cinnamon until smooth. Microwave on high for 10 second increments until it is soft and can be squeezed through a pastry bag. Transfer mixture into a pastry bag fitted with a medium tip. Or, you can use a Ziploc bag with the corner snipped off.
Pour pancake batter onto hot griddle. Pipe cinnamon mixture onto batter in a swirl shape. When pancakes are lightly browned, flip and cook until done.
Cream Cheese Icing
2 cups powdered sugar
2 ounces cream cheese
1 tsp vanilla
4 Tbsp milk
Using the hand mixer, mix until smooth and pour the icing into another pastry bag or Ziploc bag. Squeeze it over the cooked pancakes in a criss-cross design.
Is It a Keeper?
Oh….my….gosh! These are so unbelievably good! They taste just like a grilled cinnamon roll! I used my great-grandmother’s pancake recipe for the batter and they turned out fantastic! I’m not even going to take up time babbling on about how good these pancakes are…you MUST go make these. Right away! Even if it’s not breakfast time, have them for lunch or dinner or a snack. Just make them. You won’t be sorry! DEFINITELY A KEEPER!

I just made them! FANTASTIC! A few suggestions: The cinnamon mixture seemed quite thin. I would use 1/2 stick of butter. Also, when you flip the pancakes, the cinnamon mixture is now caramelizing and really gets stuck on the spatula so next time I will spray the spatula each time with nonstick spray. Other than that — they are really amazing!
