breakfast couscousI love cooking.  That’s why I have this blog.  I love to cook.  And bake (sometimes).  Homemade pasta…I’m your (wo)man.  Complicated sauces…bring it!  Roasting, braising, canning and stewing…now you’re talking!  Breakfast…eh.    Yeah, just eh.

See, mornings are not my friend.  Never have been.  Growing up, my sister was one of those chipper morning people.  Man, that bugged me.  Happy and chattering away while all I wanted was some quiet time to wake up.  Slowly.  Preferably with a nice big cup of steaming hot coffee.   I’m just not one of  “those morning people“.

So, you won’t see me bouncing out of bed, with little blue birds on my window sill waiting to bring me my bathrobe, so I can hurry to the kitchen and whip up a scrumptious breakfast for my family.  Nice thought.  But just not happening.

Don’t get me wrong.  I LOVE breakfast!  Especially when someone else makes it for me.  I even like to cook breakfast.  But it has to be on my terms.  I’m always on the lookout for breakfast dishes that can either be assembled ahead of time or require little prep time.

Now, I don’t have a good track record testing breakfast dishes on this blog.  Remember the Slow Cooker Breakfast Casserole I tried a while back?  Or, the Overnight Mush Oatmeal?  Both were great in theory but total flops in the end.  Kinda hurt my ego.  Which is why I’ve stuck with my faithful Scrambled Egg Brunch Bread, Raspberry French Toast Bake and my great-grandmother’s pancake recipe.  I know they work and I can pre-assemble them so my morning hands-on time is minimal.

I came across this recipe for Breakfast Couscous.  It sounded pretty good.  I love oatmeal and this seemed very similar, only easier.  So I sucked up my ego and gave breakfast another whirl.

Is it a Keeper?

This recipe was good.  Really good.  Really, really good.  And, did you read those instructions above?  Does it get any easier than that?  I especially liked the different textures — the firmness of the couscous, the sweetness of the cranberries and raisins, the crunch of the walnuts.   And the cinnamon just made it all warm and yummy.  I heart cinnamon.

It was a very satisfying and fulfilling dish.  And easy.  Did I tell you how easy it was?  I mean I could probably get right out of bed and make this.  It’s that easy.  However, if those birds on the window sill start chirping…well, we won’t go there.

Definitely a keeper! I highly recommend you make this.  Tomorrow.  Trust me.

      Feeling the same about breakfast, how about mixing all dry ingredients into zip-lock bag. Tips for estimated time and how to store these?

      • You know…I was thinking about trying this! Almost like an instant oatmeal. I think I’ll make some up this weekend and bring it to work with me and try it out!

    7. I understand about not being a morning person. I’m not either, ask my poor children who often end up waking mom up because I overslept AGAIN!

      I love to bake (check out my blog, it’s all about baking!) and I’ve got a couple go-to breakfast recipes that take just a couple minutes to throw together and bake for awhile, giving everyone a chance to wake up!

      I think I might try this one, too.

    17. We actually eat couscous for breakfast all the time, but I usually make it more savory. I add onion sauteed in bacon fat and then top it with a soft fried egg. I will definitely make this the next time I forget to start something the night before! Yum. By the way, I stopped over from Monday Mania.
