Green beansbroccoliThere’s a heat wave here in northeastern PA.  For the past week or so, the temperatures have been in the high 90′s.  Which means that my garden has taken off!  I was so excited when I saw my first head of broccoli show itself!  I can’t wait to dive into it!

I also noticed my first green bean tonight!  It’s so exciting to see our garden starting to produce.

I’m growing tomatoes, bell peppers (red and black), green beans, onions, basil, Italian parsley, rosemary, thyme and oregano.

Now, I just need some inspiration for how to use the bounty.  Any ideas?

    I think grilled goat cheese pizza with roasted vegetables, or pasta salad using the herbs in a homemade italian balsmic dressing, or a caprese salad, or bruschetta, or homemade salsa, or homemade pasta sauce. Yum! I am making myself hungry. Think I need to go and make a caprese salad.

      Great suggestions, Amy! You made me hungry! I always make lots of tomato sauce with my tomatoes. I freeze it and use it all year long! I need to work on the grilled pizza thing…I’ve never made one before but they look fabulous! How do you make yours?

    Do you have any secrets in growing the basil? My hubs and I are growing some now but they are now flowering and a neighbor told us the basil was now bad. Have you heard of that before and know that it is true?

    My sister does a fabulous dish with chicken, basil, tomatoes and mozzarella. I’ll be more than happy to pass along the recipe.

      Deanne — I actually have great luck with basil and I don’t do anything special. Maybe it’s the good soil? We use compost and all organic fertilizers.

      What you need to do, though, is pinch the basil where 3 leaves come together. You’ll start to see where it looks like it’s going to develop a flower…pinch that right off! Pinching helps the basil grow stronger.

      Mine usually lasts up until late summer – early fall! I have even better luck with parsely! This year, I was still using parsley from my garden in December! Usually the first frost will cause it to die.

      Please do share the chicken w/ basil recipe! I had something similar the other day at a local restaurant and fell in love with it! I would love to have a recipe though!
