Italian Pot Roast
Nothing says “comfort food” like a slow cooked pot roast! I had an extremely busy weekend ahead of me, but I still wanted to sit down to a good, home-cooked meal on Sunday evening. Enter… the slow cooker!
I was looking for something a little different that my traditional meat and potatoes recipe. So I sifted through my pile of recipes and found this:
Italian Pot Roast

1 boneless beef chuck roast (about 4 pounds)
1 envelope brown gravy mix
1 envelope Good Seasons Italian salad dressing mix
½ cup red wine
½ cup water
1 medium red bell pepper, chopped
1 medium onion, chopped
In slow cooker, combine gravy mix, salad dressing mix, wine and water. Place roast in slow cooker and top with peppers and onions. Cover and cook on low for 7-8 hours, or until meat is tender.
Is it a keeper?
Oh yeah, it is! The flavors in this recipe took my traditional recipe up a few more notches! I didn’t add potatoes and carrots this time, but I will definitely try it next time!
I did make a minor modification to the recipe. A 4 pound roast is too big for my family. I ended up dividing all of the ingredients in half, putting half in the slow cooker and half in a Ziploc freezer bag. Now I have another easy meal waiting for me in the freezer! I can’t wait!

This looks so good. I’m a traditional kinda gal- I usually throw some potatoes and carrots into the crock pot with the meat and I almost always serve salad with every meal.
Thank you for this recipe. I love slow cooker meals, and also love using chuck roasts since they tend to have such a wonderful flavor. This recipe is new to me and with chuck roast on sale this week, I plan to try it.

That looks juicy and delicious (the mashed potato too!!!). (too bad i don’t eat meat anymore, hehe).
Potatoes are a perfect side! I’d have like fresh peas too (well, frozen ones…not canned one). Ooh, and cauliflower with cheese sauce! Yes, that’d do it for me.
