Apple Cranberry Fruit SaladA couple weeks ago, I was looking for something sweet and crunchy to snack on.  But I didn’t want junk food.  After scouring the fridge and pantry, I came up with a delicious fruit salad that satisfied both of my wants –Apple-Cranberry Fruit Salad.

The Recipe

1 apple, peeled and chopped into bite size pieces
1 cup seedless grapes, halved
2 Tbs dried cranberries
1 Tbs walnuts, chopped
1 cup fat free french vanilla yogurt (I used Stonyfield Organic Yogurt)

Combine all ingredients in large bowl. Makes 2 servings.

Is it a keeper?

Of course!  This salad is great!  I love the crunch of the apples and walnuts, the pops of tartness from the cranberries and the sweetness from the grapes.  The best part, though, is that this salad is very satisfying!

I’m not a nutritionist, but I feel that this a very healthy snack option!

Unfortunately, I don’t have a photo for this one, but hopefully, I’ll remember to take one the next time I make this snack (probably tomorrow night!).  But I will say that I’m enjoying this treat right this very second!

    Hey Chris,

    This receipe sounds great, but as you know I can’t eat walnuts. Any suggestions of what I could substitute instead of walnuts? I would rather substitute something else in their place instead of just leaving out an ingredient.

    Instead of walnuts, why not try granola? It would add great crunch! In fact, I think I’m going to try that today!
