What is the quintessential comfort food?  Mac and cheese, of course!  This was the perfect choice as a side dish for my Oven-Fried Chicken.  And, I knew just the recipe I wanted to try…the Barefoot Contessa’s!

The Barefoot Contessa (Ina Garten) is my favorite Food Network celebrity.  I love her casual elegance and her use of classic foods and techniques.  So, who better to show me the perfect mac and cheese?!?!

Her recipe was easy enough.  And, delicious!  The perfect comfort food!  The only thing I didn’t do was add the tomatoes.  My husband isn’t a fan of warm tomatoes, and I knew my three year old wouldn’t eat it anyway.

What I really liked about the recipe is you can prepare everything ahead of time and bake it off just before you want to serve it.

I knew Ina wouldn’t let me down!
